Gluten Free Mini Apple Pies
Homemade GF crust with fresh golden delicious apples for a fall treat.
Ingredients
- 8 apples, peeled and sliced
- 1 tbsp. coconut oil
- 1/3 c. brown sugar
- 1/8 tsp cinnamon and nutmeg, small pinch of ground cloves
- 1/2 c. chopped walnuts or pecans
- 2 c. gf flour
- 1/2 c shortening
- 1/4 c. df gf butter
- 1/8 tsp. salt
- 1 c cold water
Directions
- Place apples, coconut oil, brown sugar and spices in a medium saucepan on low heat, stirring frequently.
- Let the apples cook for 5-8 minutes, then remove from heat and allow to cool. Place on the side
- In a large mixing bowl, combine the shortening and gf df butter and salt either in a food processer or by hand with a fork.
- Slowly add in the gf flour, making pebbly dough.
- Add in the water to make the dough more elastic and refrigerate.
- Pre-heat the oven to 350 degrees. (It is best to use a non-stick muffin tin for these mini pies so they pop out after baking.)
- Pat the dough into each muffin cup, using a glass bottom and fingers to bring the dough up to the sides of the muffin tin, top with extra dough.
- Bake at 350 degrees for 1/2 hour and check to see if it is bubbly and brown. It may need another 10 minutes depending on your oven.
- Cool a bit and loosen the pie from the pan with a thin knife. The pies will pop out easily if you tilt the pan and lift them.
- Enjoy with coconut whipped cream sauce, ice cream or powdered sugar.
