I’m not sure if all of Michigan makes their french fries this way, but this method was a blast from the past for me. I remember having shoestring french fries in my childhood and haven’t seen them since, and no, you aren’t going to hear how many years ago that was!
On a recent visit to Royal Oak, Michigan, I had dinner at Ronin Sushi Bar Restaurant. The sushi was fantastic and my side of shoestring french fries was absolutely the best fries I had in a while! It inspired me to make my own ‘Jersey version, and the result was just as enjoyable!
Michigan Shoestring French Fries
Thin cut crispy potatoes fried to a golden brown.

Ingredients
you will need a mandolin style vegetable slicer or something similar to cut the potatoes
- 5 washed and peeled Idaho potatoes (Pick the longest ones.)
- 4-5 cups of canola oil
- salt, pepper, spices of your preference
Directions
plug in the electric fryer heating the oil to 375°
- Cut the potatoes with the shoestring attachment on your mandolin slicer.
- Place a small amount of potatoes carefully in the basket and lower slowly into the oil.
- Fry for a few minutes, turning occasionally until golden brown and crispy.
- Remove to paper towels to drain the oil and sprinkle with salt immediately. If you are spicing them, place in a parchment bag and gently shake in the spices while tossing around in the bag.
- Serve immediately.
